A country pub or gastropub carries history, regulars and a sense of place, and the job is to make it warmer, more comfortable and more profitable without stripping out what made people come. Tone designs with the building — its fabric, its fireplaces, its low beams and its awkward corners — rather than imposing a scheme that could be anywhere.
